I discovered this technique quite by accident while glazing pork cutlets in our toaster oven. I missed the alarm somehow and the meat got scorched a little bit but, the result was delicious. Since then, I have improved on the technique to render meat that almost has that "just off the grill" taste from a toaster oven.

I start by seasoning and cooking my familys' required batch of meat in a standard oven until the meat is about 75% cooked ( my oven at home is a gas oven and there is no way I can achieve these results in a gas oven) at which time I seperate the batch into smaller lots that will fit into the toaster oven easily.

This is the first batch ready to have the first coating of bar-b-que sauce applied. After coating, I put the pan of meat inside the toaster oven, I set the heat control to broil and set the timer for 10 to 15 minutes.

When the buzzer rings, I turn the toaster oven down to let it cool slightly as I apply the next coat of bar-b-que sauce. I put the meat back into the toaster oven, reset the control to broil and set the timer for 10 minutes.

I repeat this process until I have the meat and sauce cooked to the degree that I like to have my bar-b-que, which is slightly scorched to get that true fire cooked flavor, and there you have it, bar-b-que cooked in a common toaster oven. Try it !
